An onion is something Chinese do not eat very often but Westerners eat
every day. In order to save money, I have been trying to learn how to
use it in Chinese dishes. After three years, this food becomes an
everyday stooge on my menu.
To learn how to eat onion, one has to learn how to cut onion first.
Some kitchen knacks I found on the Internet say one can spray vinegar
on the cutting board, or wash the knife every sometime when cutting
the onion, or soak onions into a container full of water and put the
container into frig, or peel onions in a big bowl of water.
I found the first and last tricks are too inconvenient. I tried the
second and third ones. Not very successful. Just few days ago, I tried
to soak some half-cutted onions into a bowl full of water but without
puting the bowl into the frig since the weather was so cool. After
about an hour, the water smelled stingy. I dumped the water and
refilled the bowl. After three or four bowls of water, the pedals of
the onions became so big and full, some buldged out. They looked so
beautiful and became very easy to peel.
"This is it! I found how to cut and peel onions in a very convenient way!"
Hillarious. The real trick hides in water. We only need a basin of
water to soak out the stingy fluids between onions pedals but not to
frig it out. That is the real trick of how to cut onion without crying
at all.
